The art of teriyaki

Teriyaki is quite easy to make, but difficult to truly master. Chef Hai shows how it’s done.

Teriyaki is a cooking method combining marinade or tare (which also means “to shine”), with yaki, which means grilling or broiling. At WiSushi, teriyaki starts with Chef Hai’s special marinade, made from traditional Japanese ingredients such as mirin, along with his own magic ingredients. Marinating time is key, long enough to let the flavours penetrate the meat, but not too long that the meat becomes over-cooked by the marinade.

Next comes the cooking. To get that perfectly sealed-in flavour, Hai likes to sear the chicken or salmon in a screaming-hot wok with a very high flame. (Don’t try this at home with an ordinary wok!) He chooses his vegetables depending on what’s in season, and cooks them without oil to preserve their natural flavour and keep them nice and crunchy (not to mention healthy).

The result: the sizzlingly sumptuous WiSushi Teriyaki.
